The meat inspector recognisable in his "uniform" of a flat cap has helped the meat porter - one of the elite "forts des Halles - to pull the meat out into the open into the street from inside the storage area of the meat pavilion on the left. They are being observed by the customer in his dark coat and flat hat who is standing looking at the carcass before it is loaded on to a lorry.
