Inside the covered market of Les Halles at night - the busy scene outside a meat pavilion on one of the covered through roads linking the Baltard pavilions. From 11 p.m. lorries queue up awaiting their turn to unload. Up the stairs is an office with a gallery outside which was an excellent vantage point affording a view looking down on all the activity in the covered market. Unfortunately it was virtually impossible to gain access without being spotted by a security guard. There were no pallets or forklift trucks in Les Halles so deliveries had to be lifted by hand on to one of the many different designs of upright trolley or barrow. Photographer Harold Chapman recalls that it was not always the porters who handled the goods and that "butchers would move the stuff out if it was small enough to wheel it out on the upright barrows." These butchers wearing aprons have come with their upright barrows to collect boxes packed with small items of meat including sausages and meat products.
